What a beautiful Sunday it is in Chapel Hill!  How’s the weather where you are?  I’ve had a slow morning today which feels nothing less than amazing.  Hopefully your day has gotten off to a relaxing start, too!

After Anne and I killed a 7 mile run yesterday morning, the girls and I all headed over to her place for a potluck brunch!   Anne assigned me to bring eggs which I thought was going to be a challenge since eggs typically aren’t all that portable and get cold quick.

I decided to experiment by making a veggie egg scramble in casserole form.

This casserole was a triple success:

  1. It tasted great
  2. It was easily transported to our brunch location
  3. It was served hot despite being made ahead of time

Here’s how I made it. I sauteed a bunch of veggies on the stove for 10 minutes:  1 yellow onion, a package of mushrooms (chopped), 1 orange bell pepper and green onions.  While those cooked, I beat a dozen eggs with 1/2 cup of low-fat milk and combined everything into one bowl.  I stirred in some chopped parsley to add a little extra flavor and color since I had a bunch left over from a previous meal.

The mixture went into a lightly greased 9×13 baking pan and baked for 20 minutes at 350F. It was solid but not completely cooked, which was just how I wanted it.

I let the pan cool for a few minutes while I packed up some shredded cheese and chopped bacon, which I also cooked at home ahead of time.

When I got to Anne ‘s, I just sprinkled the cheese and bacon on top and popped the eggs back in the oven for another 10-12 minutes.

This is definitely the way to do eggs for a group. They were hot, delicious, filled with veggies and fed 8 of us… and there were still leftovers! We each took a slice and piled our plates high with the other delicious sides.

Anne hosted this brunch because she is a Brand Ambassador for  Attune Foods and they sent her some goodies to share with us! Using their cereals, she baked a delicious pumpkin bread and PB&J muffins.

If you’re wondering where the jelly is in these PB&J muffins, it’s inside!!! SO GOOD.

Brunch also involved mimosas, obviously.  How cute are Anne ‘s coasters?  She picked them up at Crate & Barrel – they’re such a cute Fall decoration!

We had a great time together, as always,

and even left with parting gifts, courtesty of Attune Foods !

Check out these cute little bowls with twist-on lids.  We call them the apple-bottom bowls.

We also got coupons from Anne for some free Attune products!  I picked up a box of their Organic Granola and some Probiotic Mint Chocolate bars.

I can’t wait to try them!  The bars will be great for those busy days I don’t have time to pack a snack.  Thanks for having us over, Anne !
