This past Sunday Matt and I spend almost the entire day in the kitchen. Between preparing for Salem’s Birthday Party and cooking Brunch and Dinner we must have washed 3 loads of dishes.
Did I mention we don’t have a dishwasher?
How very 1980′s lower class of us.
It was all well worth it though. Matt and I go out for Brunch regularly but he makes the best scrambled eggs so I asked him if he could cook for me this weekend. He happily obliged and we feasted on eggs and mimosas in bed while watching Jem and the Holograms.
Mine was made up of red onion, spinach, mushrooms, sun dried tomato, diced roma tomatos and a chunk of Laughing Cow cheese. The cheese was spectacular (and so low calorie) but I started to not feel well a bit after Brunch and I think this may have been why.
Expired in March. Whoops!
After the big Birthday Party Matt and I started working on making Nicole’s Homemade Egg Rolls . During the week I will usually have a giant bowl of steamed veggies and an egg roll for dinner. It’s super quick, low calorie and pretty inexpensive! I never even thought to make my own egg rolls so when I saw her recipe I knew we had to make them asap. It was fun to make dinner into an ‘activity’ and it didn’t take long for us to make up the rolls and bake them. I made one of my favorite cabbage and broccoli sides to go with it – it’s so good that even Matt, notorious for hating cabbage, loves it!
The veggie recipe is from Rachael Ray and I cut down the olive oil to 1 tablespoon and use way more green onions!
If anyone has any favorite steamed veggies sides to share please pass them along to me – I’m running out of ideas and I know there are so many ways to make them that I have not tried before!
