The other night Michelle and I enjoyed a very yummy salad, like we normally do in the evening, but this time we made a salad dressing out of broccoli and onion. It was easy and delicious! Not much more we could ask for with our salads. Sometimes I feel as if we are salad snobs, haha… anyone else?
Usually for our salads Michelle and I like to use straight tahini or avocado for our dressings . Other ways we like to make dressings is with a vegetable as the base. We like blending hemp seeds with some vegetables and spices to make a dressing. so simple and great way to get more veggies in us.
Here is what we did:
Pure2raw Recipe: Veggie salad with Broccoli Salad Dressing
2 tbsp kraut juice (can use lemon juice, ACV, or any liquid of choice)
1 tbsp gluten-free mustard (add more or less depending on your preference)
sea salt is optional (we did not use it but you can)
plus the butts leftover from the spiralized zucchini and cucumber
To make the dressing you can either place in a mini food processor or in a blender. You may add splashes of water till you get the desired consistency for your dressing. We left ours on the thick creamy side.
Toss your broccoli dressing over your salad and enjoy. We used this spiralizer to spiralize our veggies. We use our spiralizer just about everyday, it is the best. (we also have a smaller veggie spiralizer that works great too)
Dressing takes about 2 minutes to make and serves 1-2.
As I mentioned before, Michelle and I have been enjoying a similar dressing like this one each night with our salads. We normally make our salad dressings just enough for that evening. Occasionally we do make large batches of sauces. We like to mix things up with our salads so they never really get boring to us.
