And now, my most favorite recipe for the week – the broccoli & cheese meal! It tastes divine, looks absolutely amazing and is so easy to make that you can cook it with your eyes shut :) The trick here is to steam the broccoli. Don’t boil them, please! Steaming is the only way to preserve the green color and the good look of the broccoli. Oh, you don’t have a steaming pot? Don’t worry – so do I :) You just will have to assemble your own steaming pot. Use one big or medium sized pot with a lid and a metal drainer, easy, right?
broccoli & cheese
1 big broccoli stalk
200 gr. cheese or tofu
1 teaspoon coconut oil
salt and herbs
First pour 1-2 cups of water in your pot, then place the drainer in there. The water should not reach the drainer! Lay the cut broccoli stalks in it, season with some salt and cover the lid. Boil for 15 minutes and set aside without taking the broccoli out, we need them warm.
Then melt the coconut oil and the cheese in a small sauce pan, while stirring all the time. It takes 3-5 minutes. When the cheese is light and creamy you will know it’s done.
To finish the meal – move the broccoli in a big bowl and pour the melted cheese on top. Mix well and serve!
