I’ve been eating pretty much the same thing for breakfast every day for the past few weeks.

I know- I’m super exciting.

I’m actually able to prepare this in the morning while simultaneously making sure Michael is fed and happy- which tells you how easy it is to make!

Orange oatmeal might freak a few people out, but trust me, it is delicious!

It is also extremely filling due to all of the fiber in the oatmeal and pumpkin, and those chia seeds really add some bulk as well (but not to the waistline luckily).

 

Pumpkin pie oatmeal

 

Today’s breakfast consisted of:

    McCann’s Irish steel cut oatmeal (I’ve been using the instant packets lately, and they’re a lifesaver!)
    1 cup of canned pumpkin
    1 tablespoon of chia seeds
    1/4 teaspoon of pumpkin pie spice
    1 teaspoon of organic raw honey (You can use any sweetener.)
    1/2 teaspoon of ground cinnamon
    1 teaspoon of vanilla

 

All I did was add some water to the instant oatmeal, pour in some chia seeds, and stir it up.  Then I added the remaining ingredients and popped the bowl in the microwave for about 30 seconds.

If you like your oatmeal on the creamier side, you can also use unsweeteened vanilla almond milk instead of the water.

Unfortunately, I’m off to take a sick Michael to the pediatrician.  The poor little guy has a fever and hasn’t been interested in eating much.  He’s also taken 3 hour long naps for the past two days which is definitely unusual.  I love the extra time to myself but not if I’m gaining that time because my child doesn’t feel well. :(

    The weather has finally cooled off here (for now), so I don’t feel as silly for eating eat!

  2. This looks so good:) I love oatmeal, but we don’t have canned pumpkin here in Hungary:( Poor Michael:( I hope he gets better real soon, poor baby!

    Aw, thank you. :) The doctor said it will take about a week. :(
