Breakfast socca

Hello friends,

Well I survived my Charlotte Gluten Free Expo yesterday morning. I will give a full re-cap tomorrow. I am still here in Charlotte hanging out with Gary and friends.

This morning I made my socca for my breakfast. I was feeling like something different this morning :)

I used our typical recipe for the base of my socca and just added in a few pinches of cardamon.

I baked the socca for 40 minutes this morning.

I cut the whole thing in half, one side for me and other side for Gary!

I took my half and cut into 4 small triangles.

I had to omit the salt in today’s socca because Gary does not have any at his place. Therefore I just put a small drop of coconut oil onto each slice and drizzled some yacon syrup on top :)

Heaven!

What a nice little treat for my Sunday morning after a hard day yesterday ;)

The little bit of coconut oil mixed with yacon create a nice sweet taste to the socca. I love yacon syrup but for me a little goes a long way!

Yacon provides such a lovely caramel and molasses taste! Love it! I also really like yacon not just for the flavor but because it is sugar that works for me! It acts like prebiotic!!! How awesome is that?!?! When I eat yacon syrup I am getting some ‘food’ for my healthy bacteria in me (to help grow all my healthy bacteria- yay).

Now onto running around Charlotte and getting to know the city since I plan to be here more often :)
