Blueberry Protein Pancakes + a weekend workout roundup

Can you just look at these for a second?  How good do they look?

Would you believe those are made with cottage cheese?  That is correct my friends.  Cottage cheese, oatmeal, almond milk, an egg and just a dash of cinnamon.  Oh and blueberries.  Delicious and nutritious.  I tell you….we’re full of multi-benefits over here.  Unfortunately Chris wasn’t willing to be adventurous.  I told him, “come on, protein pancakes…so good for you.”  To which he replied, “my version of protein pancakes are real pancakes with peanut butter.”  Point taken.  So I was a good wife and made him his own…Bisquick and blueberries.

Blueberry Protein Pancakes

  • 1/2 cup cottage cheese
  • 1/2 cup old-fashioned oats
  • 1 egg
  • 1/8-1/4 cup unsweetened vanilla almond milk (depending on how thick you want your pancakes)
  • Dash of cinnamon
  • 1/2 cup blueberries (I used frozen but fresh would be fine).

Mix everything except the blueberries together.  You want something strong enough to blend up the cottage cheese.  I used our Magic Bullet but you could also use a food processor or immersion blender.  I added the blueberries in last. Scoop about a 1/4 batter onto a pan (on medium) sprayed with olive oil.  Flip when you see bubbles.

I topped these with almond butter and some melted honey.  So good.

After I ate these beauties on Saturday I decided to pull myself together and go for a run.  It was 32 degrees outside so I got pretty bundled up – tights, tank, therma-fleece top, hat, gloves.  I had planned on going by myself but Chance knew what I was doing and he was so excited about it so I sucked up and took him with me (Chris loves running with him, I have a harder time).  We ran a 1.75 mile loop and I dropped him off at the house and did a wardrobe change while I was there.  Turns out I was a little too bundled up so I changed into a wool long sleeve which was much better suited for the weather.

In total I ended up running a little over 5 miles with no knee pain.  It was great.  I haven’t been able to run that far outside in a while and it makes me feel pretty good that by August, unlike last year,  I’ll be able to do Hood to Coast .  Cross your fingers for me.

Today I would have normally taken the day off but because of the January Challenge I’m doing I wanted to earn some points (and make up for ones I lost last night – alcohol, processed foods and sugar…) so I did an hour sculpt class (my gym broadcasts some of their classes online) and rode the bike for 45 minutes.

And after that I ran some errands and ate some chili that had been hanging in the crock pot all day.  I made it for the 1st time and added in some chickpeas…to be honest, it wasn’t as good as Chris’ which as I’m typing this, realize that I’ve never posted the recipe on here…I better get on that.  Anyway, I ate the chili and now I’m sitting here watching the Golden Globes and realizing that I need to watch more movies.  So far, I don’t think I’ve seen any of the movies nominated for anything.  #fail. But on the plus side, Homeland just won for best drama so we’re good there.

Alright, I need to get off of here before I ramble anymore.  Hope you all had great weekends and have a great start to the week.

Oh and tell me your thoughts on all the movies nominated at the Golden Globes.  What was your fave?  Must See’s?  No need to sees?  I still need to go see Les Miz…
