Yah thats what my stomach said too..."get in my bellayyy!" My appetite magically reappeared about half way through my photo shoot. Thank the lord because this stack-o-pancakes was deeeelish.
Blueberry Pancakes w/ Blueberry Chia Sauce
-1/4C oat bran
-2 T spelt flour
-2 dashes of cinnamon
-pinch of salt
-1/2t baking soda
-1 large egg white
-1/4C almond milk
-method: mix all ingredients together in a small bowl. The consistency of your mixture should be similar to that of oatmeal. Spray a large skillet with nonstick cooking spray and heat to medium/low heat. I made 4 small pancakes out of my batter, but 2 large ones will also work. Cook the pancake for about 3 minutes before flipping. After flipping, cook for additional 2 minutes. *Remember, keep your heat at medium/low, you want to make sure your oat bran cooks!
Not going to lie, I ended up spreading some peanut butter on top. It needed more toppings, but I didn't want to ruin my pictures :) I don't know what it is with me and toppings...the more the merrier!
Anyways, as I said before, the weather is just gorgeous here in the cities. Yesterday I took the day off from working out again, but did venture out of the house with the sister for some fresh air. Dear seester: thank you for suggesting I take this walk, mother nature always seems to lift my spirits.

Anyways, I'm thinking I'm going to take another nap and then make the sister get me some soup for dinner. Hopefully my sweet-tooth will return soon, I have lots of yogurt and fresh fruit that I would hate to see go bad.
