I hope you all are having a wonderful Sunday so far!
On Sundays I truly enjoy looking back over the past week to reflect upon my blessings and all of the wonderful things that I have to be thankful for. This Sunday I am thankful for…
My wonderful family and friends, the ability to run and be active, my animals, the roof over my head, yesterday’s sunshine, tasty food, good books, cooking, and…Waffles!
Healthy Whole Wheat Waffle Recipe…
1 3/4 cups of milk (I used skim milk)
1/4 cup canola oil
1/4 cup applesauce
1 teaspoon vanilla extract
1 cup whole wheat flour
1/2 cup flaxseed meal
1/4 cup wheat germ
1/4 cup all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon salt
In a large bowl mix together the eggs, milk, vanilla, oil, and applesauce. Carefully mix in the whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
Preheat a waffle iron, and coat with canola oil cooking spray. Pour batter into waffle iron and cook until crisp and golden brown.
Top with fruit & a little organic maple syrup!
What are you thankful for this Sunday?
“May you always have work for your hands to do. May your pockets hold always a coin or two. May the sun shine bright on your windowpane. May the rainbow be certain to follow each rain. May the hand of a friend always be near you. And may God fill your heart with gladness to cheer you.” ~Unknown
