Berry Protein Bread

Makes 8 servings @ 83 calories, 9 grams protein, 10 grams (total, not net) carbs, 1 gram fat each

Ingredients:

  • 80 grams oatbran (or oatflour)-( its about 1 cup)
  • 60 grams vanilla protein powder (or about 2 scoops)
  • 15 grams (or 1/4 cup) wheat bran
  • 55 grams canned pure pumpkin (about 1/4 cup)
  • 1/2 cup liquid egg substitute or egg whites
  • 1/2 cup Unsweetened Almond Milk
  • 140 grams (or a cup or so) of berries (I used blackberries)
  • Big pinch of baking powder
  • Stevia to taste

Directions:

  1. Preheat oven to 350 degrees. Spray an 8×8 or loaf pan with nonstick baking spray.
  2. Mix all ingredients.
  3. Pour into pan. Bake about 20 minutes, or until a toothpick inserted in the center comes out clean.
