Berry Plum Oatmeal Bars

Good morning! Its beautiful out and I can not believe its already the last day of August. Where did summer even go?! I always look forward to fall and its usually my favorite season, but this year I just really am so sad summer is coming to an end. I think its mainly because winter feels like it is so long, and I am always cold no matter how many layers of clothing I put on and how close I sit to the fire. Ugh.

I made these bars yesterday, and the base (oatmeal bottom + top) is my “go to” for quick oatmeal bars that make a great dessert, snack, or even breakfast (great for kids too). The filling usually depends on what I have on hand or whats in season.

These are fat free, vegan, and delicious. This time around I used frozen wild blueberries, raspberries, rhubarb, and an organic plum sliced on top of the berry mixture. I have the recipe posted here for when I used raspberries and coconut, but I’ll post again !

Berry Plum Oatmeal Bars
Gluten free, vegan, and fat free bars that are sweetened with your choice of honey or agave and natural applesauce. No sugar, eggs, oil, or butter needed for these bars- the natural sweetness of the berries and plum add the perfect sweetness. Enjoy!

2- 2.5 cups berries of choice (I used blueberries, raspberries, and some frozen chopped rhubarb)
1/4 – 1/3 cup agave or honey (I used honey)
1 tsp vanilla extract
splash of apple juice or water

Cook this mixture on medium heat until combined and starting to thicken. If needed, add arrowroot (or cornstarch) to thicken:

2 -4 TBS arrowroot (or cornstarch) made into a paste with cool water, and stir into berry mixture.

3 cups rolled oats [GF is necessary] (take 1.5 cups -> grind into flour)
1 tsp cinnamon
1 1/2 tsp baking powder
pinch of salt
1/2 cup applesauce
1/4 – 1/2 cup water
1 tsp vanilla

1 plum, sliced (optional)

 Take 1.5 cups of the oatmeal and grind into oat flour. Then mix the remaining oats + flour + remaining ingredients. My batter comes out wet but not runny. If its too dry, add more applesauce or water.

Spray a 8×8 pan and add a little more than half of the oatmeal batter, enough to coat the bottom nicely. Then spread on your berry mixture. Top with sliced plums if using. Then take the rest of the batter and put it on top (I like to put “blobs” of it so the filling shows through).

Bake at 375 for 30 min or until golden brown.
