Bananas for bananas

As you may have guessed already, today I want to talk about bananas.

When I was a kid, I overheard my friend’s mother talking about how bananas were “bad” for people because they were so high in calories. Her banana rant made me fearful of bananas for years.  And don’t even get me started on how Dr. Atkins made me feel about them in the 90s. Bananas were the devil in disguise!

Thankfully, today I am over my fear of bananas (though I have yet to get over my fear of clowns).

In fact, I cannot imagine my life without bananas.  I put them in my cereal, on my toast, in my smoothies… I love them.

Yesterday afternoon, I noticed that I got a little over excited at the grocery store last week when it came to buying bananas.  Since there were way more bananas in my fruit basket than even a monkey could eat, I made a little dessert.  I like to call it Banana Creamless Pie.

Banana Creamless Pie

Ingredients
1 1/2 bananas
5 graham cracker sheets
1 1/2 tablespoons canola oil
1 1/2 tablespoons maple syrup
1 tsp vanilla extract
1 tsp chia seeds (optional)
shredded coconut and cacao nibs for garnish (optional)

Put graham crackers in a food processor until finely grinded.  Add canola oil and maple syrup and pulse until mixed together.  Push the graham cracker mixture down into a ramekin with a spoon working it up along the sides and coating the bottom.  Repeat with second ramekin.  Put in the regrigerator to chill for approximately 1 hour.  Blend together banana, vanilla, and chia seeds until you have a pudding-like consistency.  Fill the ramekins evenly with the mixture and add coconut and cacao nibs for garnish.  Chill in the refrigerator for 1 hour before serving.

You can double the ingredients in this recipe, if you’re using a pie dish rather than the ramekins. Enjoy!

Michael gobbled this up after dinner, and I was a happy wife who fed her husband a dessert consisting of bananas- a wonderful fruit said to potentially reduce depression and anemia, protect the eyes, kidneys and bones, and lower high blood pressure and reduce the risk of stroke.
