Banana Walnut Bread Makeover

It drives me bananas (sorry) when I buy a beautiful bunch of greenish yellowish bananas, and they turn mushy and brown before I get the chance to gobble them up. It always happens. So...there's 2 things that I do with aged bananas. The first choice is to whip up a batch of this simple and healthy banana walnut bread. MOJO: Only 128 calories per moist slice, very low fat and sodium! Here's the recipe
  • 3/4 cup splenda
  • 4 T Smart Balance Light Buttery Spread
  • 2 Ripe bananas
  • 2 t lemon juice
  • 1/3 cup skim milk
  • 2 egg whites
  • 1-1/2 cups whole wheat flour
  • 1 t baking soda
  • 1/2 t baking powder
    1/4 cup chopped walnuts
Mix splenda and smart balance with a mixer until creamy. Add bananas, lemon juice, milk and eggs and mix approx 1 minute. Add dry ingredients and mix thouroughly. Add walnuts. Pour mixture into a PAM-sprayed loaf pan and bake in a pre-heated 350 degree oven approx 45 minutes or until an inserted tooth pick comes out clean.
