Sunshine is so rare this spring in the Pacific Northwest that we have to savor every last drop we get before it is gone. Thankfully yesterday was a gorgeous day (I am still on a Vitamin D high even though it is pouring rain again today). We decided to enjoy it while it lasted and had a barbecue with our neighbors.
For dessert I was craving something cool and sweet, but had limited items on hand. So, what did I decide to make? You guessed it… banana pudding.
This recipe is so simple. Make one box (4 oz.) of instant vanilla pudding with 1% or nonfat milk. Puree one banana using a food processor. Add to pudding mix. Chill until ready to serve.
My neighbor Tiffanie (who was so pleased her idea was going on the blog) added her own special twist and topped each serving with sliced bananas and graham cracker crumbs.
You could experiment with this dessert and add any type of fruit you want. It is a great make ahead treat. Cheers!
