Banana Pudding Pie Recipe

My my miss American Pie!  Ahh yes, the summer is here at last and tis the season for outdoor fun.  Mowers are humming, fireworks are for sale, the sunny days are long and the smoky smell of grills are gearing up for another holiday weekend.  So what are you taking to your family picnic that will appeal to a variety of folks while meeting your needs?  What’s that?  You haven’t thought about it yet?  Well no need to go bananas!  I’ve got just the ripe recipe in mind for you ;-)

Here’s my nutrient dense version of a banana creamy pie in a graham cracker crust with red and blue berries.   A versatile recipe just in time for the 4th of July weekend!

Prep this 2-ingredient crust in no time and use with a variety of pie fillings.  Make this banana pudding and eat it plain, topped with carob chips or berries – great for the kiddos!  Combine the crust and the pudding and you have a Banana Puddin Pie!!  Top with beautiful seasonal berries to create a summer treat that appears most impressive.

This dessert looks the best on day one prior to cutting.  It won’t look pretty on day two, but it’ll taste just as nice.  Due to it’s pudding-like consistency it does get messier by the day.  If you determine a secret yet healthy ingredient to enhance the pie filling’s texture, please do share with us for the sake of banana-ey goodness.
