Banana Oatmeal Cookies

I found this recipe on fitsugar.com and tweaked it just a bit. These are not the prettiest cookies but they get the job done. They are sweet because of the chocolate chips and have a little salty twist because of the peanuts. I think Blake ate about 5 of them last nite. They are right over 100 calories a cookie. I wouldn’t recommend having 5, but 2 or 3  won’t hurt right?

Banana Oatmeal Cookies

(approx. 106 per cookie)

Ingredients

  • 2 bananas
  • 1/2 cup light butter
  • 1/2 cup dark brown sugar
  • 2 tbsp truvia baking blend
  • 1 1/2 tsp vanilla
  • 2 eggs
  • 1 cup whole wheat flour
  • 1/2 cup flax meal
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 3 cups old-fashioned oats
  • 1/2 cup salted peanuts
  • 1/2 cup chocolate chips
  • Preheat oven to 325 degrees. Mix together bananas, butter and sugars. Add vanilla and eggs. Mix until combined.

    In a separate bowl mix together flour, flax meal, baking soda, salt and cinnamon. Add the dry ingredients to the banana mixture. mix until combined. Stir in oats peanut and chocolate chips.

    Drop tablespoon size balls of dough onto a greased baking sheet. Bake for 14 minutes or until browned. Let cool.

    (yields 32 cookies)
