Banana Bread

This is a dangerous time of year, with all the goodies that are about to be baked, the parties, and potlucks! I haven’t baked in a while and finally broke down and decided to get into the kitchen. I thought that banana bread was appropriate for this cooler fall weather. There is nothing better than a warm sweet bread that you don’t have to feel guilty about eating. :)

Banana Bread

(approx. 192 cals per serving)


4 ripe bananas mashed

2 eggs beaten

1 cup sugar

1/2 cup applesauce

2 cups flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/4 tsp ground cinnamon

1/8 tsp ground nutmeg

1/4 cup chopped walnuts

Preheat oven to 340. In a large bowl combine eggs, bananas, sugar, and applesauce. Then add the rest of the ingredients except the walnuts. Once all the ingredients are combined stir in the nuts. Pour batter into a greased loaf pan. Bake for 60mins.
