Hi everyone, and Happy Friday! It is a very cool and rainy one over here, and it is MUCH needed. We haven’t had rain in quite some time now, and with temps lately being in the low 100s, the low 70s feel amazing!
After enjoying a couple of slices of my Whole Wheat Banana Blueberry Bread for breakfast on Tuesday morning , I thought why not recreate the combination of flavors in a bowl of oats. Since I had a banana and a cup of blueberries that needed to be used, I got to work.
I began by boiling 1 cup of skim milk before stirring in a half cup of Quaker Old Fashioned Oats. I cooked the mixture for about 5 minutes over medium heat, stirring it occasionally, to make a nice chewy pot of plain oats.
Once the oatmeal was cooked, I put it in my bowl and stirred in 1 tablespoon of ground flaxseed , 1/2 of a mashed banana and 1 cup of fresh blueberries. The oatmeal was then flavored with two more classic ingredients in a loaf of banana bread – 1/2 teaspoon of vanilla and 1/2 of a packet of Stevia . The bowl was topped with the other half of the banana, sliced,
as well as some cinnamon and a 1/2 tablespoon of Peanut Butter & Co. Smooth Operator peanut butter for some extra protein and healthy fats.
A hot mug of House Blend coffee with a little skim milk rounded out my meal.
This bowl was filling, balanced , and had a variety of different tastes and textures! The warm blueberries plumped up in the oats, and burst in your mouth when taking a spoonful. Combined with the soft bananas, this bowl was perfectly sweet, deliciously satisfying, and tasted just like a slice of warm banana blueberry bread!
It also did a great job of warming me up on a cool morning!
