Today I got a mani/pedi with my childhood pal 'BAM". Afterwards we went to a little Mexican joint for lunch, which reminded her to tell me about a recipe for Black Bean Soup that she thought I'd like. She understands the Beast philosophy: the girl likes to eat AND she's been dropping the pounds too (wearing a tiny white tennis get-up today..go get em, girly), so I was psyched to try this healthy and scrumptious little ditty...
1T olive oil
1/2 red onion, chopped
2 cloves garlic, chopped
1/2t red pepper flakes
1/2 jar salsa (buy one with <80mg> 3/4C low sodium chicken broth
2T cilantro, chopped *optional
2 cans low sodium black beans, rinsed & drained
1 lime, juiced
Heat the oil, onion, garlic, pepper flakes in a medium pot about 8 minutes
Add salsa, broth, 1 1/2 cans of the beans, cilantro - simmer 5 minutes
Puree the mixture in a blender and add back to the pot
Add the additional 1/2 can of beans and lime juice, heat 5-10 minutes
Serve with shredded low fat cheddar cheese and a dollup of low fat sour cream or yogurt
