Balsamic Chicken Lentil Rice Broccoli Bowl

Posted Nov 01 2012 9:42am
Are you kidding me with that title? If only I knew who the author of this blog was; I'd complain...

But seriously, this recipe is fantastically easy and bomb dot com delicious. (Yes, that just happened.)
What You'll Need: Balsamic Chicken Recipe
2 Boneless Skinless Chicken Breasts
1 monster-sized garlic clove (or 2 medium cloves)
1/4 cup Balsamic Vinegar
Extra Virgin Olive Oil to coat chicken

What You'll Do: Balsamic Chicken Recipe
Preheat the oven to 450 degrees. Combine the garlic, pepper, and salt in a small bowl. Drizzle chicken with oil and vinegar, and rub with spices. If you're a planner, do not preheat the oven, cover the chicken and refrigerate overnight. If you're me, do all this right before you bake the chicken hence the preheat the oven to 450 degrees instruction.

Spray a roasting pan with cooking spray and place the chicken in the pan to bake for 10 minutes. There will be excess oil and vinegar... that's a good thing. If the drippings begin to stick, add 2-3 tablespoons of water.

Flip the chicken, add a bit more balsamic vinegar and bake for an additional 10 minutes. All done! Yummy, juicy, perfect balsamic chicken... now for this rice bowl.
