Baked Salmon with Cucumber Dill Sauce
Ingredients 1 pound salmon, raw 2 1/2 tablespoons lemon juice 2 tablespoons water 1 cup nonfat sour cream 2 teaspoons dried dill or 2 tbsp fresh dill 1/2 cup diced cucumbers 1/4 cup minced green onion
Preparation1. Preheat oven to 350 degrees F. 2. Rinse salmon fillets under cold, running water and place them in a large baking pan. 3. Sprinkle the lemon juice and water over the salmon and place the pan in the center of the oven. Bake until done, or when the fish turns opaque and flakes easily with a fork, about 20 minutes. 4. Meanwhile, mix remaining ingredients for sauce in a small bowl. 5. Serve fish fillets hot with the sauce on the side.

A new study published in the journal of the American Heart Association (see below) found that the risk of developing heart failure was lower for older women who frequently ate baked or broiled fish and higher for those who ate more fried fish. *Running Update: I know I've said it 100 times now but I love running! I have now lost 11lbs., my body feels great and looks better too!
