I know I don’t have my cord to upload pictures but I really wanted to share this awesome dish I made tonight.
My family thoroughly enjoyed the stuffing I made for thanksgiving and I did as well. I know that stuffing is not the healthiest of foods but I wanted to see if I could make a healthier version so here it is:
Baked “stuffing” quinoa: Serving 3
1/4 pd chicken sausage or deer sausage
2 carrot sticks
1.5 celery sticks
1/2 cup dried cranberries
1/2 cup walnuts
1/2 cup chicken broth
1/4 cup apple juice
1/2 cup quinoa
Preheat oven to 375 degrees. Saute sausage until brown. Then add onion, celery, carrots, and apple and saute about 5 mins on med high heat. Once done, add all ingredients in a pot or dish, add quinoa, walnuts, and cranberries. Then pour chicken broth and apple juice on top and mix everything together until fully combined. Place in oven and cook for 40 mins or until done.
There you have it. A very festive, healthy meal all in one. I placed half of mine in the freezer and then other half is going to get me through the week. I also purchased an eggplant this week so more recipes to come.
