I love the rain!! It is so magical!! It makes me want to cuddle up in front of our fire place and sip warm tea. I have been on the hunt for the perfect tea and so far I feel slightly disappointed. I got Gypsy Tea’s Hazelnut Chai, Trader Joe’s Spicy Chai, Numi’s Chocolate Puher and Celestial Seasonings Bengal Spice. I am not really excited about any of them. Sigh, the search continues!!

Bacon Apple Goat Cheese Breakfast Bars
Ingredients:
1/3 cup coconut flour
4 eggs
1/3 cup almond flour
1/4 cup unsweetened apple sauce
1 cup diced apple
1/3 cup goat cheese (or feta cheese)
4 slices crispy bacon, nitrate free
1/2 tsp baking soda
1/4 tsp salt
Directions:
In a large skillet, cook bacon until nice and crispy. Drain fat and pat bacon dry.
Pre-heat oven to 375. Grease a large baking pan.
Mix eggs, flours, applesauce, baking soda and salt in a large bowl. Gently fold in bacon, apples and cheese.
Bake for 35-40 minutes. This will depend on your oven. You want it to be slightly undercooked as it will firm up when it cools.
