I'm so sorry for being so absent...I know it has been about a week since I posted anything. I have a lot of personal stuff going on right now, with life and with my health, so I might be disappearing a bit (on and off). Hopefully things will settle down soon and I can be more consistent with my posting.
Today I tried something that I really loved, so I just had to break my "blog fast" in order to share it with you. It started with a bit of this:
With some nutritional yeast (nooch) and some quinoa.
-I went the lazy route and added the sauce directly to the quinoa instead of making them separately. Since there was no need to wait for the sauce to thicken without arrowroot, I thought it would be fine if I skipped a step (or two).
This is delicious! I haven't had real macaroni and cheese since I was a little kid, so I might not be the best judge. The sauce was delightful, even without the added thickness from arrowroot. It was incredibly creamy from the coconut milk and the tahini, and the nooch gives it the cheesy flavour. I know that quinoa is a completely different texture from pasta, so if you are looking for the bulk of noodles and the "bite" of regular macaroni, you could always try this sauce with regular pasta. Or you could use gluten-free pasta if that's important to you. I loved it! I found that the salsa on top was a good addition, but entirely unnecessary, as the mac is wonderful on its own. It was incredibly easy to prepare with very minimal ingredients. This meal was really good comfort food after an incredibly difficult week.
