Happy New Year! Hope you all enjoyed the last day of the holiday season
Now that the holidays are over, it’s time for life to get back to normal. As much as I like the relaxation and time off from real life, I am looking forward to getting back into the swing of things.
I’m still on break from school, but I am heading back to work today. I’m still a little tired from the last few days, but I’m hoping I catch up on sleep this week!
Since I knew I would be at work all day and most of the rest of the week, I spent some time yesterday prepping few things for week. I cooked up enough Steel Cut Oats for 4 days, made a batch of quinoa for lunches, and baked up some sweet potatoes for snacks and lunches as well. When I was finishing up, I packed my lunch and snacks for the day and popped them in the fridge (I’ll grab them on my way out for work).
Leftover chicken, quinoa, roasted peppers, asparagus, and an orange for lunch – homemade FOB strawberry yogurt with granola and a cut-up sweet potato with almond butter for snacks.

I started out the day with an early morning workout. My alarm went off at the wonderful hour of 4:30am and I quickly made myself a pre-run/workout snack.
1/2 multi-grain bagel with a smidgen of AB, pumpkin butter, and honey
My workout consisted of a 4 mile run (legs were not feeling 6 this morning and I’m ok with that) and a strength workout with Jess. Between me being exhausted, the 4 mile run, and the intense strength workout, my body felt dead. Thank goodness for my prep last night because I was able to refuel with a breakfast that took less than 5 minutes
1 cup of cooked Steel Cut Oats with 1/2 tbsp chia seeds, 1/2 cup of lactaid cottage cheese, and blueberries mixed in – chopped walnuts on tops = YUM … and a cup of french vanilla coffee on the side!
Now I must get my booty off the couch and ready for work!
