Well, things are finally back to normal after hashtag Sandy. I can admit how much I take electricity for granted, but that didn’t stop me from turning every light on in the house the minute we got power back. Despite the tragedy brought by Sandy, I am so thankful that my friends and family are safe and that life is back to normal.
Now, I’m able to get Starbucks. In red cups, mind you.
Skinny peppermint mocha soy latte thanks to Jill Hanner’s Instagram making me crave it!
I am able to wear makeup and something other than sweatpants and hoodies that don’t match.
Okay fine, I’m a personal trainer, all I wear is sweatpants anyway.
And most importantly, I can cook again!
I made icebox cake (beware, super old post) for Joe.
And a paleo stuffed pepper recipe that I’ve been eyeing up. One is missing – Oh, it’s on my plate! Quality assurance.
I prepped Jenn’s baked falafels and tzatziki, but obviously had to sample some of that too before packing it up for the week.
It’s been a crazy two weeks and now it’s basically Thanksgiving already! A lot of changes are coming up for me and I’m looking forward to keeping you all updated…..as soon as I can!

My friend Kristina was able to host girls night.
Solo cup champagne toast.
Sue was able to make these absolutely delicious chocolate salted caramel cupcakes for us.
Please note my chocolate nutella fudge with sea salt in the background that was totally shown up by Sue’s cupcakes.
