Back in Action

Good Morning Bloggies! :)

How are ya today? I’m pleased to report that I am now migraine-free and feeling about a million times better than I did yesterday. I used to get migraines a lot as a teenager, but this was my first since moving away from home in 2006. I always feel bad for the poor souls that are in the house with me when I’m trying to get though one because crying and wailing away seems to relieve the pain, and it’s probably not the nicest thing to listen to! (My roomie is amazing though and she was looking after me.) Naturally, I called my mum because it just seemed like the right thing to do. I’m not sure what I thought she was going to be able to do from 3 hours away, but nevertheless it was nice to have a chat! It just goes to show that no matter how old you are, a girl sometimes just needs her mum!

Yesterday’s eats were far from spectacular due to the fact that I slept through lunch and didn’t have much of an appetite. I ended up making the 3rd 5 Days of Sandwiches feature for dinner, and it was a bit of a mish-mash of ideas that I’d been contemplating. The Toasted Egg and Swiss Sandwich started with some basics, lettuce and tomato. I also made a Roasted Red Pepper spread with 1/2 of a roasted red pepper (I bet you never would have guessed), some Greek yogurt, paprika, and chipotle chili powder.

Next came a sliced hard boiled egg and a little Swiss cheese. I prefer to grate my cheese rather than slice it because it can be distributed more evenly and you don’t end up using as much.

I closed ‘er up and popped it in the press.

The verdict? Great! The only thing I would do differently (and I have adjusted the recipe for this) is eliminate the tomato. The Roasted Red Pepper Spread really provides enough flavour on its own, and the sandwich already has a high juiciness factor that doesn’t really need any more assistance from tomato.

Other eats consisted mainly of fruit and yogurt combos, like the one below:

I think they should change the name of Kashi Go Lean to Kashi Go Everywhere, because it goes well with anything!!

Oh, and before I forget, I mentioned that I would post the recipe for the Pork Tenderloin Stir Fry with Udon Noodles that I made using my new Sobaya Kamut Udon Noodles on Tuesday . It is now up!


Since I slept for a total of about 5 hours yesterday, plus another 8 overnight, I was feeling rather alert when I woke up this morning! My plans today are to catch up on the work I missed yesterday (my part of a group paper, and an individual final assignment for my Global Marketing class), and perhaps do a little reading of Eat Pray Love . I saw the trailer for the first time yesterday and I’m getting so excited for the film to come out! Here’s a sneak peek for you:
