Back Home with Autumn Oats

Hey guys,

I'm home and back in Michigan! But remember that screaming baby I was telling you about? It was on the left, one row behind us--in the seat right next to my dad! Thankfully he had earplugs, but it was pretty annoying. My mom was like, "well maybe next time he'll let us upgrade to first class." Haha! ;)

The flight went alright, but I took two of my anti-panic attack pills cause I was still really anxious before the flight took off. At first I just took one, but I was still pretty worried after an hour an 15 minutes or so. My mom (a doctor) and I thought that maybe I was getting used to the dosage? So I took another... I probably should have taken a half, ha! I was knocked out for pretty much the entire flight, and I was falling asleep walking to the park-your-car place. I slept on the drive home, then went to bed and slept til 11:50 Michigan time/ 8:50 Arizona time (we had gotten back at 3:30 MI time). Sooo the time difference is throwing me off a lil, but I am SO GLAD to be home!

We tried to eat up all the perishable food in the house, so there weren't many breakfast options. I used my sleepy little thinking cap, and pulled out the apple I brought back on the flight. In honor of the cooler Michigan temperatures, I made Autumn Oats for my mom and I.



I sliced an apple (skin on) into little bits, and popped it in the microwave for 30 seconds. Then I added it to the stovepot with oats and water. I brought that to a boil and turned it down to simmer for 5-6 minutes, while adding vanilla extract, pumpkin pie spice, and lots of cinnamon. Afterwards, I added a drizzle of agave nectar because the apple doesn't lend a natural sweetness like the banana oats. My mom didn't want pumpkin in hers, so I gave her a spoon of Mighty Maple peanut butter for hers and that was that! But I wanted some pumpkin in mine, so I stirred in a 1/2 cup pumpkin, put another dash of cinnamon on, and got a spoon of Mighty Maple pb.

Tada! Autumn Oats. You could try skinning the apple if you don't want any kind of chewy texture, but I kinda liked it. It smelled delicious when it was cooking--like apple crisp or something! I love how it has all the fall flavors -- apple, vanilla, cinnamon (apple crisp/apple pie), maple, and pumpkin! If you've got maple syrup on hand, I'd try a drizzle of that, too. I'm sure it'd be fantastic. It may not techinically be Fall yet, but since it's 30-40 degrees cooler here, it definitely feels like it! Well, actually it just feels liveable ;)

Anyway, that turned out to be a great breakfast for the ingredients I had on hand! My mom loved it, too. We're off to head to the grocery store and re-stock. Then I have to tackle my google reader --I've got 230+ unread items right now! Yikes!

Q: When you come home from a trip, how long does it take for you to re-adjust to your normal schedule?Are you good to go right when you get back, or does it take awhile for you to get back in the groove?

It depends on factors like time change and everything, but I have a feeling it's gonna take several days for me to re-adjust to Michigan. Ha, I need to remember to change all my clocks--my computer still says it's 9:59am when it's actually almost 1 pm! It's good to be out of that blazing sun and back into a more laid back schedule, though :)
