This morning I decided on a totally indulgent breakfast. (Ok, it was actually healthy but tasted like it was!) I’ll call it Chocolate Covered Strawberry Oatmeal with Cream:
1/2 cup oatbran cooked in 1 1/2 cup water + cinnamon and
2 tsp 100% dark cocoa powder
Pinch of stevia
1 cup diced fresh strawberries (stirred in after oats were done cooking)
Topped with “cream”:
1/4 cup Fage 0%
1/2 tsp Wholesome Sweetners Organic Raw Blue Agave
And 2 tsp Chocolate Better’N'Peanut Butter + 1 tsp real peanut butter
It was so delicious! I’m not a big fan of fake peanut butters but this chocolate one tasted like chocolate syrup or something in the oatmeal.. mmm!
After breakfast I pretty much just lounged around the house. I got hungry about 3 hours after breakfast so I decided to make lunch! Last week when my mom cooked salmon she put 1/2 of it in the freezer and took it out today so it would be already prepared. I decided to eat some greens too:
Mixed greens
Salmon
1 steamed zucchini
1 Precious Pepperjack Cheese stick
Homemade salsa, hot sauce
I’ve never been a cheese person but for some strange reason I’ve been craving it lately.. guess my body needs something that it provides!
That salad was not filling enough so I followed it up with some carbs and more protein:
1/2 cup Fage 0%
1/4 cup pure pumpkin
1/4 cup Natures Path Crunchy Maple Sunrise cereal
1/4 cup Trader Joes High Fiber cereal
1 tsp peanut butter
Cinnamon, ginger, stevia
Much better! Afterwards I headed to meet a prospective babysitting client and then came home and headed to some stores. I had to buy a couple more books for school.. ugh! Plus my sister and I went to Bath and Body Works and snagged another free lip product
And then when we came home we watched Sunshine Cleaners. I snacked on some cantaloupe during the movie:
For dinner I started with 5 of Nate’s Meatless Meatballs, steamed broccoli with Braggs, and some tomato paste for dipping:
And then ate 1/2 sweet potato with 2 tsp Trader Joes crunchy peanut butter, cinnamon, and ginger:
Ok I lied! That potato was so good I went back for the other 1/2 with another tsp of peanut butter! Who was I kidding??
Well I’m off to relax the rest of the night and get ready for school. I start college tomorrow! I’m going to the community college that’s about 10 minutes from my house so it’s not that big of a deal. Right now I’m working on my pre-requisites but I should have my Associates Degree as an R.N. in two years!
