Avocado & Banana Stuffed Sweet Potato

Hi Friends!
 
Seems like most of you are like me – you’d like to use coupons but you either constantly forget about them or you end up buying things you wouldn’t normally get! Plus it somehow seems like cheating to use so many and get all of those products for nothing. Anyone agree with me there? (I’m talking about the TV show, not using a $1 off coupon from the newspaper)

So I wanted you all to meet a friend who moved in with Jason and me last week:

I bought this gigantic balloon for Jason’s birthday (March 8th) and it has lived in Jason’s office until last week Sad smile And now he is tied to our front door. I just can’t bear to pop him and throw him away, so he is staying put for now. My Mom’s birthday is coming up soon so maybe we’ll give him to her?

I went to the gym after work to run 4 miles – and I felt like I was FLYING the entire time! I used the same idea I did on Wednesday – after each 1/2 mile, bump up the speed. I switched between 6.3 mph and 6.8 mph! I felt really good and the guy on the treadmill next to me told me that I must have ran a hundred miles because I went so fast! haha!

For dinner, I baked/microwaved up  big organic sweet potatoes. I prefer oven baked potatoes but I didn’t have enough time. I wanted to eat! I mashed up the potato and topped it with some mashed banana and mashed avocado. It sounded strange, but those are 3 of my favorite foods, so why wouldn’t I eat them together?

We also had some apple chicken sausage that I picked up from Trader Joe’s.

I thought this tasted AMAZING. The sweetness of the banana went really well with the tater and the avocado on top was so buttery and smooth. Delicious!

*What is the strangest flavor combo you have tried?
 
I don’t remember if I read about someone else having the sweet tater/banana/avocado combo – it just seemed like a good idea at the time!
