Hello!

My name is Erin, and I am addicted to avocado.

That’s right.  For the past several months, I’ve been consuming about 4-5 avocados a week.  There’s just something about the creamy texture that I love so much.

The avocado has been enjoyed in the form of guacamole, on open-faced sandwiches, on top of mushroom burgers and veggie burgers, at restaurants, on vacation in Mexico…

However I can get it, it’s mine!

And for the past couple of months, my lunches have involved open faced sandwiches made with sprouted rye bread smeared with avocado and topped with sliced tomato.  I cannot get enough of them!

But there could worse addictions, right?

After all, avocados are a great source of healthy fat, and they have many wonderful benefits, including:

  • Cancer prevention
  • Eye health promotion
  • Lower cholesterol
  • Heart health
  • Stroke prevention
  • Blood pressure control
  • Anti-inflammatory properties
  • Blood sugar regulation
  • Birth defect prevention
  • Anti-aging effects
  • Bad breath prevention
  • Increased nutrient absorption
  • Glowing skin
  • Healthy hair (I’ve really noticed how shiny my hair has been lately!)

Since I’m kind of obsessed, I have a whole bunch of recipes saved that involve avocado:

  • Do you like avocados?  What is your favorite recipe involving them?  Links are welcome!
  • Have you been on any food kicks lately?  I’ve also been pretty into pumpkin smoothies.  I love the fall!
Have a great weekend.  I’ll be back on Monday!

***Edit: Some readers had questions about how to store avocados and how to keep them fresh.  Check out the comments for my tips!

Another avocado fan? I knew that I loved you! :)

I am dying to try the avocado fries. I haven’t had them yet. Let me know if you try them!

Michael might meet up with some guy he knows in a few weeks, and it will be out near you. I told him that I’d come, so I could see you. I’ll keep you posted!

  2. I’m definitely an avocado addict! Like you, I probably go through 5 each week. They’re just so GOOD! Recently I’ve discovered they’re quite tasty as dessert, especially in a rich chocolate pudding. Yum!

Love this list of recipes! Definitely let me know if you make the avocado fries. :) Happy Friday! xoxo

I love how avocados can be so versatile! I’ll definitely let you know if I make the fries. They sound incredible! Have a wonderful weekend! :)

  3. i’m an avocado addict too :) … i use them all the time in smoothies. i also love to eat them straight out of their shell. (it is called a shell, right?!) just sprinkle a little salt and it’s good to go!

    • thegrassskirt

I think it’s called a shell, or is the skin? Whatever it is called, I like eating them that way too! :)

  4. I go through phases with avocados sometimes I want one so bad and usually when I need to eat one I dont really want it… its weird

    • thegrassskirt

I am waiting for the day when I make myself completely sick of them, but so far, I am going strong!

  5. I’m not sure if you’ll be my friend anymore, but I’ve never tried avocado! My husband HATES it so I’ve just never thought to try it. I may need to change that soon :)

    • thegrassskirt

I now have a new mission- to get you to try it! We’ll start you off with guacamole. I’ll be kind and let it go until after the baby is born though, just in case you have some sensitivity to it. ;)

  6. Erin – I do have an important question for you. How do you keep the other half from going brown if you do not eat the whole thing? I was on an egg kick for a bit and love my smoothies for breakfast. Have a Great Weekend:)

    • thegrassskirt

I have the same issue with not finishing the whole avocado and wanting to save it for later. I slice the avocado in half and then store it in a plastic bag or airtight container face down with the pit still inside. It slows down the browning process and can keep for up to 2 days. If it is brown when you remove it from the fridge, try scraping off the top part. It should be nice and green underneath. :)

      • Oddly, I saw the other day that Tupperware makes a container for a half an avocado. So that must be a common problems. :)

  7. I’m a bit peculiar when it comes to avocado – I hate it on its own but LOVE guacamole. I think it’s the texture that i dislike so much which isn’t really an issue with guac. It’s too bad though, because all these recipes look so fun! Have a great weekend :)

    • thegrassskirt

At least, you still like guac. :) I hope that you have a great weekend too! Love ya!

  8. Hi Erin, so I LOVE avocados BUT I find that they’re never the right type of ripeness- they’re always too fresh and need more time or they’re too far gone. I don’t even buy them anymore because I always throw them out – either I try to eat them too early or too late and they’re both pretty gross. Any suggestions so that I start enjoying them more often???

    • thegrassskirt

Hi Erin! If you buy an avocado and it is very hard, you can speed up the ripening process by placing it (whole)in a brown paper bag for about 3 days. If you are concerned about your avocados getting too ripe, you can store them in the fridge for about 5 days. I buy 5 of them once a week and never have problems with them going bad because I store them this way. Hope this helps!
