My name is Erin, and I am addicted to avocado.
That’s right. For the past several months, I’ve been consuming about 4-5 avocados a week. There’s just something about the creamy texture that I love so much.
The avocado has been enjoyed in the form of guacamole, on open-faced sandwiches, on top of mushroom burgers and veggie burgers, at restaurants, on vacation in Mexico…
However I can get it, it’s mine!
And for the past couple of months, my lunches have involved open faced sandwiches made with sprouted rye bread smeared with avocado and topped with sliced tomato. I cannot get enough of them!
But there could worse addictions, right?
