Asparagus White Bean Salad

Bunch of Organic Asparagus: $1.50 (on sale)

Carton of Tomatoes: $1.00 (on sale)

Can of Northern White Beans: $0.89 (on sale)
Olive Oil, Vinegar, Spices, Sunflower Seeds: Already in my cabinet
Lunch: Priceless
Well, it was almost priceless. I spent a total of $3.39 on the ingredients for this delicious Asparagus White Bean Salad that will provide me 4 meals. That's $0.89 per meal! *zing*

Asparagus White Bean Salad
Ingredients
-1 bunch of asparagus
-1 can of northern white beans
-4 large tomatoes
-3T sunflower seeds
-3T apple cider vinegar
-2T olive oil
-1T Sunny Paris Seasoning
-1t garlic salt

Method
1. Begin by steaming the asparagus in a large skillet. Fill the skillet with about 1 inch of water. Then place asparagus in the water and cover. Turn your burner to high heat and cook for about 7-9 minutes. Drain and chill for ~2 hours.

2. Next, dice the tomatoes into 1/2 inch chunks. Then in a large bowl, mix together tomatoes, sunflower seeds, and beans (drained and rinsed). Slice chilled asparagus into halves and toss with tomatoes and beans.

3. Finally to create your dressing, mix together apple cider vinegar, olive oil, and spices. Then toss the salad in the dressing.

*Serve chilled




I normally would have used balsamic vinegar in place of the apple cider, but I was all out (sad face). I love love loveeee the tangineses the ACV gave to this salad. It was perfect.

Can you believe the deals I got on the ingredients for this salad? Seriously, I know right? A surprise guest was very impressed with my deals and extremely satisfied with this salad. Guess who is here visiting?

That's right! The sister is here from Boulder. She has an entire week off of school *jealous*, so she stopped in the cities for the weekend and will be driving back to Milwaukee with me for Thanksgiving. Ohhh is it nice to have her home :) (Ps: I promise I am not this pale in real life.)
