Apples + Maple Syrup for Everyone!

I’m so glad I got my 7 mile long run done on Wednesday in the 80 degree, sunshiney day.

It would have been miserable to do it today. If you’re not in New England, today is a beautiful rainy and cold (in the 40s!) day. Since I am slightly crazy, I did venture out to the farmer’s market, then for a speedy 4 miler.

I was feeling the fall while shopping for veggies today. I picked up an acorn squash, some sweet potatoes, a few red potatoes, a 5 lb bag of carrots, spinach, and broccoli. Although there were still some tomatoes, bright peppers, and other summer foods, they didn’t call to me today. I wanted sweet taters & squash to warm me up!

I did have to finish some veggies from last week, though, including a yellow pepper and cucumber. I sliced them up for an afternoon snack, with hummus on the side. I throw hummus on everything.

It was pregnant with a baby pepper! I thought it was the cutest thing ever.

Enchanted Broccoli Forest

The recipe is from a Mollie Katzen cookbook, and it’s quite simple. I used brown rice, broccoli, frozen peas, onions, garlic, and some cheddar cheese. I made it twice in the past week and a half because it was so good! It’s called enchanted forest because the broccoli looks like trees in a forest. Obviously, broccoli are magical and enchanted too.

I made a little sauce to pour on top with hummus, nutritional yeast, and hot sauce for some kick.

Baked Apple

I’ll be eating at least 1 apple a day for the next month. My boyfriend & I went apple picking this week with a living social deal. We picked a half bushel (~20 lbs) and a half gallon of apple cider. My fruit bowl and fridge drawers are overflowing with them.

I got fancy with breakfast today and make a baked apple. I just cored the middle, stuck some raisins, walnuts, and maple syrup in there. I stuck it in a pan with apple cider in the bottom, then baked for about 30 minutes. It was perfect for a rainy, fall day like today. I have enough apples and maple syrup to invite everyone over to make them! Wanna come?

I have a half gallon of maple syrup because my aunt & uncle make it every year, and we get it for free. Good thing it’s my favorite sweetener.
