Apples & Bananas

I woke up this morning to some brown bananas. And, before discovering all the healthy recipes, I used to throw brown bananas away because, well, they’re not very appetizing. But this morning I saw them and I was :D because that meant it was baking time. I just so happened to have some leftover pumpkin as well.

These recipes make 6 muffins each.

 Banana Muffins

  • 3/4 cup of flour
  • 1 rounded tablespoon brown sugar
  • 1/2 tsp each baking soda, baking powder
  • 2 tblsp egg whites
  • 1/2 tsp cinnamon
  • 2 mashed bananas

Pumpkin Spice Muffins

  • 3/4 cup & a little bit more of pure pumpkin puree
  • 1 rounded tablespoon brown sugar
  • 1/2 tsp each baking soda, baking powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tblsp egg whites
Preheat the oven to 400 degrees. Mix the wet ingredients with the dry ingredients and you’ll have to mix it for a good 2-3 minutes before it all comes together.
Use the toppings of your choice. I had some walnuts & dark chocolate chips on hand, so I topped the muffins & snacked on a couple walnut pieces in the process.
Bake for 14 minutes.
Sooooo good. It’s already a hot, sunny day outside so I thought a smoothie would be fitting to go along with one of the muffins.
Blend up:
  • 1 cup frozen mixed berries
  • 1 cup diet cran-pomegranate juice
  • 2 tablespoons vanilla nonfat yogurt
  • handful of spinach
  • 1 banana
  • pinch of xanthan gum
I forgot the chia seeds. Grrrrrrraghhh. But I topped it with pomegranate seeds! Yum.
I have to get my workout in now because at 1 pm, I’ll be watching Steve Jobs deliver the Apple Keynote at WWDC. I am an Apple fanatic. Judge me if you want to.
