Does anyone know where the weekend went?! I feel like each weekend goes by faster each week! Crazy…
My weekend consisted of working on Saturday and then heading into hoboken to celebrate Mikey’s (soon-to-be brother-in-law .. weird!) birthday. It was so nice to have a night out with everyone – definitely needed it Hope you had a great birthday Mikey!!
I came home Sunday afternoon and immediately got to work on some baking and cooking. Remember those apples my mom and I picked a week ago? ( click here ) Well, I finally got the chance to cook some up! Some new recipes will be going up on the blog this week, but in the meantime I’ll share some of the pictures of the deliciousness that was created in the kitchen yesterday
A mixture of all the types we picked (note to self: somehow label/write down what each kind is when you pick them next time – it will save you the time it took to figure it out by pictures …) got peeled, cored, sliced, and thrown into the crockpot to become applesauce! I also threw in the two pears we had left since they needed to be used.
After 6 hours of cooking, the apple sauce was done and the kitchen smelled like fall
While the apples, pears, and some other yummy additions were becoming one in the crockpot, I decided to bake up some apple muffins with some of the Golden Delicious apples we picked.
They came out perfect! Moist, subtly sweet, and appel-y (yes, that’s a word )!
While they cooled on wire racks, I got the McCoun apples ready for the oven. We decided we would have baked apples for dessert
As the apples went into the oven, we sat down for a yummy dinner. The menu consisted of simply grilled halibut, steamed broccoli, and sweet potato fries!
So simple, yet so delicious!
After cleaning up and doing some school work, the apples were done! I started cutting into it before taking pictures – woops! I guess I got a little TOO excited for the scrumptious treat
I enjoyed mine over a dollop of greek yogurt – Mom and Mitch has ice cream! Also, I used regular butter for them and my yogurt butter for my apple since I can’t have realy butter
The only bad part about spending the afternoon baking/cooking is that I want to do it again today. Once we finish the muffins, you can be sure that I’ll be baking another yummy apple treat!

In other news, this marks the LAST week of my marathon training – WHAT?!
That went by fast! In a mere 6 DAYS(!) I will be running my first marathon - crazy, right? I’m focusing on getting my last few runs in before the big day and making sure I get enough sleep and rest. Also, I’m paying close attention to my diet to make sure I’m getting all the nutrients I need to perform my best on Sunday.
Here’s my workout schedule for marathon week:
Monday: an hour of yoga to de-stress and stretch out my muscles (running back to back on Thursday and Friday and dancing the night away on Saturday has left me a little tight!)
Tuesday: 3 mile speed run and a leg workout with Jess
Wednesday: Upper Body Bootcamp with Jess (possibly some bike action depending how the legs feel)
Thursday: 3 mile run @ (tentative) RP and back/bis strength training
Friday: 2 mile walk and Chest/shoulders/tris strength training
Saturday: REST (spending the day in AC at the expo and relaxing – dinner at Carmine’s at night!)
Sunday: RACE DAY! 26.2 miles
Not going to lie, it’s going to be tough running ONLY 3 miles – but I know it’s what I need to do to prep my legs for Sunday. Here’s to the last week of training! 26.2 I’m coming for you
