Apple-Cinnamon Oatmeal

I doubt you can really call this a recipe since it’s SO simple to make. Also, it’s oatmeal and I think it’s safe to say that foodies do not need a recipe for oatmeal. But this one’s different. It’s apple-cinnamon oatmeal.

I totally stole the idea from my sister Christina. She made this for breakfast when I went to visit her in London in September and I think it was the first thing I made after coming back to Munich {yes, it took me nearly 2 months to blog about this}. Anyhow, the secret lies in the apple sauce. I used unsweetened store-bought apple sauce but with the abundance of apples available right now it would be great to make some yourself. The apple sauce not only adds the autumny flavor that I love so much, but the oatmeal becomes super creamy.

In addition to that, the cinnamon apple on top is sort of like the icing on the cake. Slathered with cinnamon, brown sugar and butter it’s too good to not inhale straight away. You can certainly use any kind of apple, I however used one which was already soft since it was lying around in my fruit basket for too long. Too add extra crunch top with your favorite granola, I topped it off with toasted apple-cinnamon muesli .

It’s one of those super easy breakfasts that you can whip up in less than 10 minutes so it’s perfect for weekdays when every second counts.

Apple-Cinnamon Oatmeal

serves 1

Ingredients:

  • 1/3 cup oats
  • 1 tsp. chia seeds
  • 1/2 tsp. ground flax seeds
  • 1/2 cup water
  • 1/2 cup milk
  • optional: 1/2 banana, sliced {adds extra creaminess}
  • 1/2 – 3/4 cup unsweetened applesauce
  • 1/2 apple, cut into bit size chunks
  • 1.5 tbsp. butter
  • 1.5 tbsp. brown sugar
  • 2 tsp. cinnamon

Instructions:

  1. In a skillet melt the butter. Once lightly browned add the apples and cover with 1 tsp. brown sugar and cinnamon and wait for the apples to brown whilst stirring. Set aside.
  2. Add the oats, chia seeds, ground flax seeds, water, milk and the banana in a pot and heat to medium-high heat. Stir occasionally.
  3. Once the oats thicken add 1 tsp. of cinnamon and optionally add 0.5 tsp. brown sugar to sweeten.
  4. Transfer the oats to a bowl and top with the apples and optionally with toasted apple-cinnamon muesli .
