Apple Cinnamon Chewy Granola Bites

Hi Blog stars! I had a such an enjoyable weekend of just hanging out and baking. The weather here in Minne is still in the upper 80's, which is like 20 degrees warmer than the average. I'lllll take it. You know me and cold weather, we don't mix. 

Yesterday was pretty much my perfect day. 5K + lunch date + baking + nice weather + good company. An old friend of mine from Freshman year, Carly, asked me to run a 5k with her, supporting breast cancer. Uh, yes! Breast Cancer is something that affects the majority of Americans in some way or another and the 5k was cleverly named "Saving Second Base 5k." #love


After the race, we decided on Cafe Latte for lunch in St. Paul. I am so sad I forgot my camera because lunch was AH-MAZING. The way Cafe Latte is set up, is like a cafeteria line. You can pick a little of everything. I got a three sample platter: Curried Chicken Salad, Balsamic Vegetables, and Wheatberry Broccoli Salad. 
Anyways, I am really glad we decided on lunch. It was so nice to catch up with Carly. We lived across the hall from each other Freshman year in the dorms. I always find it fascinating how with some people, you can pick up right where you left off, even three years later. 
After lunch we walked around Grand Ave. and did some shopping. For all you J Crew fans out there...30% off Sale items PLUS, if you are a student you receive an additional 15% off. *yessssss please* 
The day gets even better. Carly, like me, is a nutrition nut. We decided it was only in our best interest to come home and bake! We decided on Homemade Granola Bars. These guys we made, turned out just like Chewy Bars, but healthy!

Apple Cinnamon Chewy Granola Bites Ingredients -1 1/2C rolled oatmeal -1/2C spelt flour (or any kind of flour) -3T flax seeds -1/2T salt -1 egg white -1T cinnamon -1 large apple, diced (McCintosh) -1 medium banana, smashed -2T coconut oil, melted -2T honey
Method 1. Preheat oven to 350F and grease your baking sheet. 2. In a large bowl, mix together oatmeal, flour, apple, flax seed, salt, and cinnamon. Set aside 3. In a medium sized bowl, mash a banana until it becomes liquid. (This is a substitute for sugar). Then add the rest of your wet ingredients.  4. Finally, mix together dry and wet ingredients. The consistency should be damp and sticky.  5. Scoop ~1T of batter into each cupcake holder. Make sure you pack the batter down, so it sticks together.  6. Bake for 10-12 minutes or until golden brown. *You can also make granola bars. All you have to do is use a normal cake sheet


These guys are SO CUTE! A perfect little snack. They aren't extremely sweet, but I love the different textures from the oats, apple, and flax.



We found an old recipe and did a few substitutions to really make these guys healthy bites. We substituted spelt flour for white flour, egg white for a full egg, coconut oil for canola oil, and a mashed banana for brown sugar. Now that they are half gone already, I'm just going to have to make another batch :)
