Oh man… what an awesome Thanksgiving! I hope you all had great ones, too
I’m so thankful for the kindness of friends. My dad is out of town for work, and the rest of our family is scattered about this year, so our friends were nice enough to invite me, my mom, and my brother over to eat with them and their family! We had an absolute blast.
Here my mom and I are with two of our hosts – they are twins! I always wanted a twin
And here’s me, my mom, and my brother outside their house all decorated for Christmas!
My mashed sweet potatoes came out awesome, by the way! Ya’ll have to try making this for Christmas (or just for yourself in a smaller quantity!). It was so simple, delicious, and nutritious! No sickeningly sweet sweet potatoes here!
Spiced Mashed Sweet Potatoes
(serves about 12)
Ingredients:
- 6 sweet potatoes
- 1 Tbsp cumin
- 1 Tbsp cinnamon
- 1/4 C skim milk (or dairy substitute)
Instructions:
Peel and boil the sweet potatoes until tender (cut them into smaller pieces to make them cook more quickly), then drain and place in a bowl.
Mash until desired consistency is reached.
Add in cinnamon, cumin, and milk. Mix with a spoon and you are ready to rock! Serve warmed, with a smile
It was quite a hit at the party!
Promise me you’ll try it
So there were 10 of us at the party, plus their adorable kids, but there was seriously enough food for 50 people. It was insane! Our friends are Lebanese, so it was a really fun mix of traditional Thanksgiving fare plus Lebanese specialties
I’ll leave you with a photo montage of some of my favorite dishes!
The hummus was so gorgeous I have to put one more photo up of it
So happy and stuffed
We were there eating for like 5 hours straight! Good thing I was nice and hungry from my Turkey Trot
How did you spend your Thanksgiving? Are you as full as me right now?
