An Update and An Awesome Recipe!

Oh my...
Today is March 19th and it is 21 degrees outside, snowing, with 30 mph gusts of wind that have the temperature holding at a bone chilling 6 degrees.
As you can imagine, I have decided against an outside run. In December, I could get all bundled up and brave the cold. In March, I am daydreaming about flip-flops and tank tops.
A little last minute meeting and change of plans has delayed today's run.But it will happen...yes, it will happen!Today is a day that I need to sweat it out and run it off.Even if you aren't a runner...you know those days!I got in a nice strength training/cross training day yesterday. It felt good to be able to toss around the 10# weight.As I mentioned before, the diet (as in, what I eat, not the losing weight kind of diet!)The diet is undergoing a major overhaul.I have an appointment with the allergist on the 4th and I am looking forward to that-Seriously!Interestingly enough, I read this week that digestive issues can cause food allergies to set in.I am going to see if I can find out more about that. I definitely have digestive issues.It has me curious, that's for sure!Speaking of food...Ha!I am starving and I am pretty sure I wasn't talking about food.I have a muffin in the oven (big surprise, right?!)
But I wanted to share a quick and easy recipe with you.
Banana Bars with Cacao Nibs
 
2 small bananas, mashed
6 Tbs. 100% Liquid Egg whites
1/2 cup Unsweetened flax milk
1/4 cup Low Carb Baking Mix
4 Tbs. Coconut Flour
2 Tbs. Kamut Flour
1 tsp. Baking Powder
1/4 tsp. Baking Soda
2 tsp. Vanilla
1 tsp. Stevia
1 Tbs, Cacao Nibs
Combine all the ingredients.
Pour into prepared 7x11 baking dish.
Bake for 20-30 minutes.
Using that size dish, I got 16 bars. You could most definitely use an 8x8 and get thicker bars.I am phasing out the Low Carb Baking Mix because of the wheat it contains.You could substitute your flour of choice.
As prepared, per bar:
  • Calories: 35.0
  • Total Fat: 0.8 g
  • Sodium: 22.7 mg
  • Total Carbs: 5.2 g
  • Dietary Fiber: 1.5 g
  • Sugars: 1.4 g
  • Protein: 2.0 g
