Amazing Birthday Weekend

Jimmy did an amazing job planning a fun birthday weekend for me.  Prior to leaving for our trip the only thing he told is me is that we would be camping, but not in a tent (To avoid a repeat of our disastrous rained out camping trip a few years ago).  When we arrived I was instantly in love with the campgrounds and adorable cabins that we stayed in.  Jimmy knows that I’m in love with the outdoors especially in the fall.

Friday night, we made sausage and peppers on our campfire grill, roasted marshmallows, and cuddled up next to each other by the fire on the cool September night.  We headed to bed a little early since Jimmy had a full day of activities planned for Saturday.

The next morning we cooked up some sweet potato hash and eggs.  This was our first time making sweet potato hash, but I will definitely be making this again because it was delicious!!  It’s so easy to make!  Simply dice up sweet potatoes and onions and cook them in a fry pan with olive oil.  Serve an over easy egg on top!


Later that morning we headed to Sterling Forest to hike up to the last functioning Fire Tower in NY.  The hike was a nice moderate climb, great for beginners (For those of you in the area) and offered some amazing views.  It was a bit foggy out on the day we were there, but we were told on a clear day you can see Manhattan from the top of the Fire Tower!.

Before I moved to the City I used to hike several times a year.  It is something that I have definitely missed since moving down here and I’m happy Jimmy took notice of that and took me on a hike for my birthday.  He said that we actually weren’t very far from our house and could definitely be something we do more often!

After the hike we went to a farm store to get lunch.  I got a grilled chicken caesar salad on a spinach wrap, perfect meal after a morning hike!!  We did some shopping in the store and got some jams to take home along with a bag of apples!  Can’t wait to make something with these later!

Later that night Jimmy said he had one last surprise for me.  For the past few years I’ve been saying that I wanted to go on the Headless Horseman Haunted Hay Ride.  It’s pretty far from where we live, so getting up there was kind of difficult for a short few hours on a hayride.  Jimmy realized that it was only an hour from hour campsite so decided to finally take me there!!

The Hay Ride has been voted number 1 for the past several years and I finally know why!  While I didn’t get scared on the Hay Ride, it was still an amazing show and they did an incredible job on the story and setting.  After the Hayride you go through a series of Haunted Houses.  Now, while I wasn’t scared on the hay ride, I was definitely scared in the Haunted House!  Something about having to actually walk through it was terrifying and I held onto Jimmy as I screamed my way through!

On Sunday we headed back home and Jimmy told me to find a new recipe that I wanted to try for him to cook up.  I saw this recipe online over the weekend and knew instantly I had to have it!   Taco Pasta Skillet  care of Julie at Peanut Butter Fingers!!

We finished up dinner with Funfetti Cupcakes- my favorite!! :)  Any Jimmy gave me my birthday gift, Swarvoski earrings and a new cold weather running shirt from Lululemon!

Just more reasons why I’m a lucky girl!!  I still can’t believe I get to spend the rest of my life with this amazing man! ;)
