It truly is hard to believe, but today is my last official day of undergrad. My final exam is scheduled from 5:45 to 7:45 tonight then I am home free (until I come back up here for graduation on Saturday). My day will consist of a little last-minute studying, packing, and working out. Since I have already loaded up my espresso machine, I hit up the local Starbucks for a soy latte this morning. I still cannot believe it is OVER; it just hasn’t hit me yet!
I thought I’d share a few of the pictures from my camera with you today. Most of them are of the recent foods I have been eating, but there are a few other random ones as well. First up are some delicious red skinned potatoes I have been absolutely loving. Add a little rosemary and the flavor is superb!
Even though they were darn good just plain, I decided to add a little ketchup (of course). I swear, ketchup adds flavor to just about any vegetable – LOVE IT!
This past Sunday was the grand opening of our local HomeGoods store; yes, I was up at 7:30 to stand in line. Honestly, I didn’t think it would be as crowed as it was – let me tell ya, people are absolutely crazy! The good new is, I found a ton of great stuff for my new apartment in Texas (that I am moving to in June). Hopefully you can tell, but this is one of the adorable decorative mirrors that I bought (it is under a cart, as you can tell from the reflection).
Can you guess what this next picture is? Yes, they are Annie’s gummy bears. Little did I know, our local health food store was having a tent sale on Sunday and passing out all sorts of free goodies. For some reason, lately I have had the biggest sweet tooth EVAAA – thankfully, these totally hit the spot!
In case ya’ll were wondering, this is what the outside of the package looked like. They are organic, made with real fruit juices, contain no preservatives, and are pretty freaking tasty!
My spinach salad earlier this week turned out perfect! I topped it with roasted snap peas, corn, black beans, sauteed onions, carrots, and a few tomatoes. Switching up your salad it key – don’t get bored and have the EXACT same variety every single day!
Next is another one of the freebies I received at the tent sale. It was a gluten free peanut butter chocolate granola bar. It was more like a rice krispy treat on steroids (if you ask me).
Gin-Gins are probably the best hard candies I have EVER tried – that is saying a lot! At first, I was a little reluctant to try a ginger-flavored candy – to my surprise, they were so tasty! The ginger flavor is very subtle, and I hear they work wonders on an upset stomach.
Bob, our cook at my sorority, made homemade hummus this week. I was curious as to what he used because it has a unique flavor – apparently, he adds a little hot sauce… YUM! It is so creamy and delicious; I seriously use it on just about everything!
Yes it’s true, I have a new bar addiction. Carrot Cake Clif Bars are the bomb.com! I was lucky enough (and completely surprised) to receive an entire box of them from my friends at Clif Bar – thanks guys, you’re the BEST!
This is what they look like – notice the small bits of carrot pieces scattered throughout. Have I ever told you that my parents had carrot cake for their wedding? I think I am going to follow in their footsteps because I am obsessed… I guess it runs in the fam!
This was part of my awesome-sauce dinner last night (hence I had about 3 more rolls). The potatoes were delish – they were more like fries but whatev. I had kind of an upset stomach last night… it was probably from all the broccoli I had (and loads of other fibrous foods throughout the day). Whoops!
I tried a new drink this past week – a Steaz Green Tea. It was pretty good but I don’t think I would buy it again… maybe I am just not a fan of green tea, who knows! It was on sale at Harvest Health so at least I gave it a try!
