Almond Joy Protein Pudding (vegan*/no sugar added/high protein) + MRM Egg White Protein (review)

Almond Joys used to be one of my favorite candy bars. Well, back in Poland we had Bounty bars which were pretty much Mounds. I loved them. So much. But then I discovered Almond Joy when I moved to the US and I loved those bars just as much. Something about the coconut and chocolate tasted so exotic and light, but yet so satisfyingly good. I loved this sweet combo.
Then I started eating cleanly and I dropped all candy bars. I haven’t had an Almond Joy in probably over a year. Sad. Thankfully, since becoming a clean eater, I have also become more creative in the culinary department. Since I have recreated numerous favorites into a healthy alternatives, such as my Reese’s overnight oats or my banana cream pie parfaits . I think it’s time to make more candy bars into healthy yummy alternatives. So here came the Almond Joy protein pudding.
I recently ran out of Jay Robb Egg White protein powder and I’ve gotten some new egg white protein powder to try out. I’m weary of trying out new products just like that but this one seemed like a good deal as well. MRM has all natural protein powders, including the egg white – which contain no artifical flavors, colors, or sweetners; and are free of any dairy products . “It offers a source of protein that is 100% derived from egg albumen. Produced from a superior extraction process, our egg white concentrate provides a foundation of essential amino acids that mixes easily and tastes better than traditional egg white proteins.” I tried the MRM Egg White protein powder in french vanilla flavor. This flavor packs only 120 calories per scoop and 24g protein and only 1.5g carbs. It is also sweetened with Stevia. I enjoyed this protein powder, it is actually very sweet – sweeter than Jay Robb’s as far as I recall. I haven’t tried it in a smoothie or shake yet, since I usually use my protein powders in more extravagant ways haha, but the flavor is very good. I’d recommend this product , especially since it’s cheaper than Jay Robb’s egg white protein in the same flavor!
I also got a shaker bottle from the company which is bigger than my regular one. Perfect actually, now I don’t have to go to the water fountain as often to refill it I drink water like it’s my job!
So anyway, now forward to the recipe. You’re gonna like this one, readers. It actually tastes like an Almond Joy but you don’t have to feel guilty about eating it! Like, ever. Unless you eat 5 bowls of it, I guess. Haha.
Almond Joy Protein Pudding

Ingredients (serves 1)
3/4 cup plain nonfat kefir (*use coconut kefir for vegan)
2 Tbsp coconut flour
1/3 scoop MRM Egg White Protein, Vanilla (or vegan protein powder)
1/2 tsp almond extract
1/4 tsp cinnamon (optional)
2 Tbsp vanilla unsweetened almond milk
Mix all of the ingredients (except almond milk) for the pudding together very well. Add in a Tbsp of almond milk and mix again. Add another if you think the consistency is still too thick for your preference.
In a separate, small bowl, combine the glaze ingredients and mix briskly. Pour the glaze over the pudding and garnish with coconut shreds and slivered almonds if you like.
