Years ago Ryan had been visiting friends in San Diego and he would come back raving about Acai bowls. Never able to find one here in Chicago, I researched recipes and gave it a few gos but never having tried it I didn't think it was turning out that great. 2 years ago we were in Seattle and I finally had one, it was amazing! And then a year ago in Santa Barbara we had the best one yet. I took a picture of the menu for the ingredients but I couldn't quite get the consistency right, a little to runny, not cold enough, too sweet. The perfection consistency is a little thicker than a smoothie and really, really cold. But I finally did it! Cold, healthy, protein-filled, energizing, and delicious. The trick: use more frozen fruits than liquid and blend until smooth but watch carefully as to not over blend. Never had acai before? It is a very sweet, super fruit packed with anti-oxidants.
Makes 2 Bowls Recipe1 frozen unsweetened Sambazon acai smoothie pack 1 1/2 cups frozen unsweetened blueberries 1 cup unsweetened coconut milk 1 Tbsp Agave 2 Tbsp Flax Seeds 1 scoop Vega Vanilla Chai protein powder (optional) 1/4 cup favorite granola, Jessicas Natural Granola Vanilla Maple Break up the frozen acai pack into smaller pieces making it easier for the blender. Blend all ingredients until one smooth consistency. Serve in a bowl, topped with your favorite granola!
