What I am about to share with you is my all-time favorite sandwich. In fact, in our house, it is most affectionately referred to as The Ashley Sandwich -- I eat it (at least) once a week, usually on Friday night . . . and then again on Sunday.
Exciting stuff, right? Well, for me, it certainly is. I wish I could dig my teeth into this baby right now. Phew! I'm working up a sweat here!
It's easy enough to assemble. Just get some wheat rolls (or ciabatta bread), a ball of fresh mozzarella, a vine-ripened tomato, some fresh basil, olive oil, and salt.
Pile the mozzarella high. Lay the slices of tomato on top . . . and then the basil. Drizzle the olive oil on the top slice . . . and sprinkle with salt.
