Today has flown by! I can’t believe its almost 3pm. Crazy..
This morning I was up bright and early as usual to get in a hilly 5 miler before my exam – it was a success!
I took my exam then got in the car and drove all the way home for the week. Easter Break
I packed myself some left-over grilled chicken and maple sweet potatoes to snack on for the car ride.
When I got home, I made myself some lunch with some more leftovers I took with me from school and some that my mom had in the fridge.
I made a salad combining both lettuces (mine and my mom’s) with some red wine vinegar and olive oil. I topped it with the remainder of my leftover grilled chicken (not very much), some roasted chicken, green beans, and peas my mom had in the fridge – probably from dinner last night
On the side I toasted up my last Rudi’s Organic Spelt English muffin and topped it with some PB and 1/2 banana.
Hit the Spot! – I love making meals at home, especially when I’m always packing mine for the week.
I have Leg Bootcamp with Jess tonight and a 12 miler on the agenda for tomorrow! We are having Easter at our house this year and I’m cooking, so I decided to get my last 12 mile training run in before the weekend festivities begin (2 weeks from Sunday until the UNITE 1/2 marathon!!). We’ll see how my legs like this one … ha!
I’m off to relax for a bit before my next workout!
