Smoothies have been eaten of course but you knew that would be the case!
One of my favourite meals at the moment is a mushroom omelet with goats cheese and salad. The cheese is quite salty and strong and eaten warm in this omelet its a real joy for the taste buds! I am finding that eating goats cheese and yogurt seems to be quite well. I am hoping that I will be able to eat a little more dairy after introducing this back into my diet for a while longer : )
Another thing I love is hemp milk straight up chilled from the fridge, its glorious!
A little rewind to Thursday. Me and my sister Jes went to London for the day, we went to review a restaurant and hang out at the Pinterest party I shall be blogging about both in more detail over the next few days so look out for those posts!
My big news is I have adopted the stray cat! After he was picked up last Wednesday he was taken to a cat charity home then the vet saw him on Thursday. He is not sick, got good teeth and has been neutered but not chipped, so he must have had a home at some point. But being 6/7 yrs old rehoming him wasn't going to be easy and the thought of him sitting in cage waiting for someone to realise how lovely he was broke my heart so me and Dale had a long chat and decided he should come and live with us! Dale named him Sid and he has moved in! I am trying to not get too attached as he may decide to move on but he is such a lovely cat, he has laid beside me every night on the bed since we took him in! I am hoping he has found his new owners and is happy to stay : )
Yesterday, I had a day of baking. I made some Anzac cookies which need some improvements! I also made some chocolate coconut bites for my dads birthday meal we had last night which went down very well!

Chocolate Coconut Bites
You Need: 3 cups of shredded coconut, 1/2 cup each of cacao powder, maple syrup and coconut milk, 1 tsp vanilla extract, 1 egg white and a dash of sea salt
To Make: Preheat oven to 325F. Combine first 5 ingredients in a bowl. Whisk egg white with dash of salt, 1-2 minutes until soft peaks form in bowl.Fold egg white into coconut mix and combine fully.Use a Tbsp to take scoops of mix out of bowl and form into balls with fingers.Place balls onto a parchment lined baking tray and bake for 30 minutes, turning after 15 mins. Cool for 1 hr then as an optional extra dip into melted dark chocolate and leave to set.Enjoy!
I took the pudding round to my sisters for our dads dinner and she made the main which was amazing! Sweet potato curry with rice, chickpea dahl and some chickpea flour pakoras. Gosh I was stuffed after this! We went out Friday and Saturday night for Dales sisters 21st birthday too. Friday night with his mums side of the family and Saturday night with his dads, its been pretty heavy on the food this weekend. I am looking forward to this week getting back to normal eating. I must have put on about 5 pounds!
This morning I was up early to do my 6.15am fitness class in the park, great way to start the day! I then came home had a coffee and did another crazy workout called the 99 workout, for this and other fitness/workout inspiration follow my other twitter account here !
I had clients to train after my workout so had a rather late breakfast smoothie with a toasted top!
I will be back tomorrow to share with you my Tibits restaurant review which was bloody awesome I must say, but for know its back to the job hunting!
