Let’s face it. While I know I eat a ton of variety, my breakfasts are mostly oats or toast, and occasionally eggs or a smoothie, almost always involving a banana. Not bad, right? I know I could eat those things every day, but after a while I’ll start to feel like I need a little something ‘extra’ to finish off my breakfast – maybe an apple, or some nuts. I can’t tell if I’m full, because some part of me is not yet satisfied.
I have to change things up. I have to stop being lazy, and take a few extra minutes for a more satisfying breakfast!

What? She had pancakes? Honestly, they’re still not my favorite – I think it’s because I like more texture in my food. But these were good. I loosely followed Mama Pea’s vegan protein pancake recipe, and added a bit of carob powder to make them more interesting. Topped with warm black berries (heated from frozen), tahini butter (favorite!) and cinnamon.
They were good. Really good. I think the extra protein definitely helped keep me full, as well. I don’t see myself making pancakes on a regular basis, but I will throw them into the mix once in a while.

Now this, is another story. Healthy french toast: 1 egg, 1 slice whole grain seeded bread, splash of (soy)milk, a few stevia drops, vanilla and cinnamon. Mix everything (except the bread), soak the bread, cook on medium/high for a few minutes each side. Top with warm frozen blackberries
Okay, why have I not done this before? Thank goodness eggs and bread are cheap.

Another new thing – I went to a hockey game! Sweden vs. Czech Republic. Hockey isn’t really my cup of tea, but I forced myself to do it for the sake of being social. And I’m glad I did. Although Sweden lost in a sudden death shootout.

There was a guy dressed up as an angry bird. And when I tried to photograph him I got his back side. Boo.

Another on-a-whim thing I tried, and it was fantastic. Lunch today – scrambled sweet potato and eggs, with spinach. Actually, a lot of my meals look like this – protein, carb, and veggies all in one mix, and those are the meals I don’t always post. They’re always tasty, but never pretty.
This one I don’t care, it was fantastic. I grated one whole sweet potato, steam-fried it in a skillet, added the greens, and when slightly wilted I added two beaten eggs and scrambled it all up with some spices. I’d post a formal recipe, but I don’t really remember what I ended up adding to the mix. With a blood orange for dessert. Mm!
