A job meant for squirrels: Honey cinnamon raisin peanut butter

 Thank you everyone for all of your comments and positive words on my last post . It really means a lot. You are all amazing! :)

Whenever I'm feeling down or stressed, a good workout or getting my bake on in the kitchen helps me the most. I've been keeping up with my Insanity workout schedule even through the tough days and soreness. Last night it was hard for me to get to sleep, so I stayed up til one making "semi cheater" cookies.


I call these my "semi cheater" cookies because I used Betty Crocker chocolate chip cookie mix and jazzed them up with Reeses chips and a melted Reeses chip drizzle/smear. They never fail, taste good and they make a ton of cookies for John to share at work.


On Friday, I came up with a genius plan to make homemade peanut butter using the 
bag of nuts I bought for the squirrels in our yard.

I spread them in a single layer on a baking sheet and roasted them for about 30 minutes at 375 degrees.

Now for the FUN part!! Shelling the peanuts.. 

I'll save this job for the squirrels next time...my fingers are raw.
The bag made about one and a half cups of nuts, but you can always skip the step above and buy pre-roasted nuts. ;) Now for the recipe!

Honey cinnamon raisin peanut butter:
Ingredients
  • 1 1/2 cups roasted peanuts
  • 1 1/2-2 tablespoons honey
  • 1 1/2-2 teaspoons cinnamon
  • 1 teaspoon canola oil (peanut would maybe be better)
  • 3-4 tablespoons raisins
  • half a packet truvia or other sweetener(optional)
Directions 
  • Place roasted peanuts to food processor and blend until very creamy.
  • Add honey, cinnamon, oil and sweetener and blend until smooth.
  • Remove from food processor and stir in raisins.

Not going to lie, best.peanut.butter.ever. 

Roasting my own peanuts may have been painful, but with the taste of this peanut butter, I have no regrets. Making my own nut butter from now on!
