Good Monday evening everyone! I hope your day is ending on a good note. I just got back from a grueling yet pleasant work out at the gym...I'm feeling GOOD! Gotta love those endorphins ;)
I hope you all enjoyed my post about Ezekiel bread. I will leave the ultimate decision to you, but I am personally a HUGE fan (if you couldn't tell already)! It's the only bread I eat MOST of the time; there are those rare occasions where Ezekiel bread is just not available and during those times I chose the next best available thing, usually Earthgrains.
OK, on to breakfast! This morning I had my all time favorite: oats and yogurt!
That blob in the middle is one teaspoon of all-natural peanut butter and it turned out to be the perfect addition to an already delicious meal! In addition to the yogurt, oats, and peanut butter, there was also some walnuts and raisins in the mix. As you can probably tell, this meal was VERY filling and turned out to be a whopping 460 calories. Those calories went straight to my muscles, I can assure you ;) I was hungry again about three hours later and decided on my usual salad for lunch. This HUGE salad consisted of about two heaping handfuls of raw spinach, about 1/2 cup mushrooms, 1/2 small avocado, some bell peppers (various colors mind you...a variety of color ensures a variety of nutrients), cucumber, one teaspoon of extra virgin olive oil, and two tablespoons of balsamic vinegar. I served up my salad with a generous portion of baked sweet potato and tilapia. Let me tell you, this meal was AMAZING.
There's the lucky sweet potato that I chopped up and baked for lunch. Rather large, yes, but I did cut the ends off and threw them away before I washed it, so it turned out to be the size of my fist...the recommended serving size for a starchy carb. Sweet potatoes are also slow digesting carbs (just like Ezekiel bread) which is why I eat them often.
Lunch turned out to be 370 calories. Surprising, isn't it? By looking at it I'd say that's a day worth of food right there, but in truth, it's not even half. Good thing too or else I'd be in trouble ;)
After enjoying a big lunch, I decided on a meal of light fare. On the plate is some edamame (fancy term for soybeans), chickpeas, cucumber, peppers, and some red pepper hummus. I could live off raw veggies and hummus for life...I LOVE this stuff! This meal was only 220 calories.
About an hour before I scampered off to the gym to get my sweat on, I had a yummy combo of Ezekiel bread (what else?), a Gardenburger, and some steamed veggies. Having been newly refueled with a surprisingly filling 214 calories, I was off to the gym for some weights (today was legs day) and 35 minutes of resistance intervals on the elliptical.
Upon homecoming, I kissed and hugged the love of my life and adorable step-son and then promptly made myself the usual: Of course, I already have breakfast on my mind, but I will leave the planned eats as a surprise ;)
All my eats today added up to a grand total of 1485 calories and 100 grams of protein! Again, look at ALL that food and for so little calories! Amazing.
I am off to call it a night and prepare myself for another day in the world of clean eating. I will leave you with a well-known yet under appreciated fact: you NEED at least 7 hours of sleep EVERY night in order to be well rested and keep your body functioning at it's best.
