I just returned from my 8 mile run this morning!! It felt amazing, a little warm since I didn’t get out the door at the time I wanted, but still great! Maybe it’s just me, but on the days I have off, it takes me so much longer to actually get myself out the door to run. During the week when I have to work I get up, get dressed, and get moving. I’m typically out the door within 15 minutes of waking up. On the weekends and when I have days off like today, it takes me a couple of hours to get out the door after waking up.After my run I was in rush mode since I procrastinated for so long this morning. I needed to make myself a big breakfast/lunch since we have a long drive ahead of us and most likely won’t have time to eat again until much later. I was craving the sweet potato hash that we made when we went camping and figured since I watched Jimmy make I’d be able to make it as well.
Luckily, I was chatting with my friend Sara (who is an amazing cook and writes a vegetarian blog ) at the same time because when it started to burn she told me how to stop it. FYI all you have to do is turn the heat down on the stove!! Who knew it was that easy? In the end it came out delicious!!Now, I really have to get to cleaning and packing. Jimmy and I are headed up state for one of his friends weddings. One of his other friends and his wife should be arriving very soon to drive up with us and I have to pick them up at the train station. So, as much as I’d love to stay and blog all day its time to finally get moving!! I hope everyone has a great weekend planned!
